Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • ½ cup breadcrumbs (preferably panko)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 2 tbsp olive oil (for frying)
  • 12 oz pasta (spaghetti, penne, or your choice)
  • ½ cup basil pesto (homemade or store-bought)
  • 1 tbsp fresh lemon juice (optional)
  • Fresh basil leaves, for garnish (optional)
  • Extra grated Parmesan cheese, for garnish


Instructions

  1. Cook pasta according to package instructions. Drain and toss with basil pesto and lemon juice if using.
  2. Flatten chicken breasts slightly. Season with garlic powder, onion powder, salt, and pepper.
  3. Mix Parmesan cheese and breadcrumbs in a shallow bowl. Coat chicken breasts evenly with the mixture.
  4. Heat olive oil in a skillet over medium heat. Fry chicken for 3-4 minutes per side or until golden and cooked through.
  5. Slice chicken and serve atop the pesto pasta. Garnish with fresh basil leaves and extra Parmesan if desired.

Notes

  • Panko breadcrumbs add extra crispiness, but regular breadcrumbs work as well.
