Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup grated Parmesan cheese
- ½ cup breadcrumbs (preferably panko)
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 2 tbsp olive oil (for frying)
- 12 oz pasta (spaghetti, penne, or your choice)
- ½ cup basil pesto (homemade or store-bought)
- 1 tbsp fresh lemon juice (optional)
- Fresh basil leaves, for garnish (optional)
- Extra grated Parmesan cheese, for garnish
Instructions
- Cook pasta according to package instructions. Drain and toss with basil pesto and lemon juice if using.
- Flatten chicken breasts slightly. Season with garlic powder, onion powder, salt, and pepper.
- Mix Parmesan cheese and breadcrumbs in a shallow bowl. Coat chicken breasts evenly with the mixture.
- Heat olive oil in a skillet over medium heat. Fry chicken for 3-4 minutes per side or until golden and cooked through.
- Slice chicken and serve atop the pesto pasta. Garnish with fresh basil leaves and extra Parmesan if desired.
Notes
- Panko breadcrumbs add extra crispiness, but regular breadcrumbs work as well.
- Use fresh basil pesto for best flavor or store-bought for convenience.
