Ingredients

  • 1 lb chicken breast (or chicken thighs)
  • 2 tbsp olive oil or sesame oil
  • 2 cloves garlic, minced
  • 1/2 cup low-sodium soy sauce
  • 1/3 cup pineapple juice
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar or apple cider vinegar
  • 1 tsp cornstarch
  • 1 tbsp water
  • 1 1/2 cups cooked rice
  • 1 cup pineapple chunks
  • 1/2 red bell pepper, diced
  • 1/4 cup green onions, chopped
  • Optional: sesame seeds, crushed red pepper


Instructions

  1. Heat oil in a skillet over medium heat.
  2. Add chicken and cook until browned and cooked through. Remove and set aside.
  3. In the same pan, sauté garlic for 30 seconds.
  4. Whisk soy sauce, pineapple juice, honey, and vinegar. Pour into pan.
  5. Mix cornstarch with water and add to sauce. Simmer until thickened.
  6. Add pineapple chunks, bell pepper, and cooked chicken. Stir to coat.
  7. Serve over cooked rice and garnish with green onions and optional toppings.
