Ingredients
- 1 lb chicken breast (or chicken thighs)
- 2 tbsp olive oil or sesame oil
- 2 cloves garlic, minced
- 1/2 cup low-sodium soy sauce
- 1/3 cup pineapple juice
- 2 tbsp honey or brown sugar
- 1 tbsp rice vinegar or apple cider vinegar
- 1 tsp cornstarch
- 1 tbsp water
- 1 1/2 cups cooked rice
- 1 cup pineapple chunks
- 1/2 red bell pepper, diced
- 1/4 cup green onions, chopped
- Optional: sesame seeds, crushed red pepper
Instructions
- Heat oil in a skillet over medium heat.
- Add chicken and cook until browned and cooked through. Remove and set aside.
- In the same pan, sauté garlic for 30 seconds.
- Whisk soy sauce, pineapple juice, honey, and vinegar. Pour into pan.
- Mix cornstarch with water and add to sauce. Simmer until thickened.
- Add pineapple chunks, bell pepper, and cooked chicken. Stir to coat.
- Serve over cooked rice and garnish with green onions and optional toppings.
