Description

Pizza Enchiladas combine the flavors of pizza with the convenience of enchiladas. Filled with beef, pepperoni, cheeses, and wrapped in soft tortillas, then baked with pizza sauce and melted mozzarella on top, this dish is a fun twist on pizza night.


Ingredients

  • Filling:
    • 1 pound lean ground beef
    • 1 cup yellow onion, diced
    • 1 medium green bell pepper, diced
    • 3 ounces pepperoni, chopped
    • 1 tablespoon garlic, chopped
    • 1/3 cup pizza sauce
    • 1 tablespoon Italian seasoning
    • 1 cup ricotta cheese
    • 1 cup mozzarella cheese, shredded
    • 1/3 cup beef bacon, crumbled
    • 8 large flour tortillas
  • Topping:
    • 2 cups pizza sauce
    • 2 ½ cups mozzarella cheese, shredded
    • 3 ounces pepperoni slices
    • ¼ cup beef bacon, crumbled


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
  3. Add onion, green bell pepper, pepperoni, and garlic. Cook until vegetables are softened.
  4. Stir in ⅓ cup pizza sauce and Italian seasoning. Remove from heat and let cool slightly.
  5. Stir in ricotta, 1 cup mozzarella, and ⅓ cup beef bacon.
  6. Spread a small amount of pizza sauce in the bottom of a baking dish.
  7. Spoon filling onto each tortilla and roll tightly. Place seam-side down in the baking dish.
  8. Pour remaining 2 cups pizza sauce over the enchiladas. Sprinkle with 2 ½ cups mozzarella, pepperoni slices, and ¼ cup crumbled bacon.
  9. Bake for 20–25 minutes, or until cheese is melted and bubbly. Serve warm.

Notes

  • Customize with your favorite pizza toppings like olives, mushrooms, or sausage.
  • For extra spice, add crushed red pepper flakes to the filling.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven.
