Poor Man’s Husband Casserole is a classic, budget-friendly comfort meal made with ground beef, pasta, and a creamy, cheesy tomato sauce. Simple ingredients, easy preparation, and hearty flavor make this casserole perfect for feeding a family without breaking the bank.


Ingredients

  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 oz) can tomato sauce
  • 1 (15 oz) can diced tomatoes (optional)
  • Salt and black pepper, to taste
  • 1 tsp Italian seasoning
  • 8 oz pasta (elbow macaroni or shells)
  • 1 cup sour cream
  • 1 cup cottage cheese
  • 2 cups shredded cheddar cheese


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook pasta according to package instructions until al dente. Drain and set aside.
  3. In a large skillet over medium heat, brown ground beef with chopped onion until fully cooked. Drain excess fat.
  4. Add garlic and cook for 30 seconds until fragrant.
  5. Stir in tomato sauce, diced tomatoes (if using), Italian seasoning, salt, and pepper. Simmer for 5 minutes.
  6. In a bowl, mix sour cream and cottage cheese until combined.
  7. In a large mixing bowl, combine cooked pasta, meat sauce, and sour cream mixture.
  8. Transfer to a greased baking dish and sprinkle cheddar cheese evenly on top.
  9. Bake uncovered for 25–30 minutes until bubbly and lightly golden.
  10. Let rest for 5 minutes before serving.

Notes

  • Ground turkey can be used instead of beef.
