Description

This Red Lobster Biscuit Chicken Pot Pie brings together creamy chicken filling and buttery cheddar biscuits for a comfort food classic with a restaurant-inspired twist. Perfect for cozy family dinners or entertaining guests.

Ingredients

  • 3 cups cooked chicken, diced (rotisserie chicken works great)
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 cup cream of chicken soup
  • 1 teaspoon garlic powder (for filling and biscuit topping)
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • ½ cup chicken broth
  • 2 ½ cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • ½ cup unsalted butter, cold and cubed
  • 1 cup shredded cheddar cheese
  • ¾ cup milk
  • 1 tablespoon garlic powder (for a Red Lobster touch)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine cooked chicken, mixed vegetables, cream of chicken soup, 1 teaspoon garlic powder, onion powder, chicken broth, and season with salt and pepper. Mix well and set aside.
  3. In another bowl, whisk together flour, baking powder, 1 teaspoon salt, and 1 tablespoon garlic powder. Cut in cold cubed butter until mixture resembles coarse crumbs.
  4. Stir in shredded cheddar cheese. Gradually add milk, mixing until a soft dough forms.
  5. Pour the chicken filling into a greased 9×13-inch baking dish. Drop biscuit dough by spoonfuls over the top, spreading slightly to cover.
  6. Bake for 25–30 minutes or until biscuits are golden brown and filling is bubbling.
  7. Let cool for 5 minutes before serving. Enjoy warm!

Notes

  • Use rotisserie chicken to save time and add flavor.
  • For an extra Red Lobster touch, brush baked biscuits with melted butter and a pinch of garlic powder before serving.
  • Frozen biscuits can be used instead of homemade for a quicker option.
