Ingredients
- 3 cups cooked chicken, diced (rotisserie chicken works great)
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 1 cup cream of chicken soup
- 1 teaspoon garlic powder (for filling and biscuit topping)
- 1 teaspoon onion powder
- Salt and pepper, to taste
- ½ cup chicken broth
- 2 ½ cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- ½ cup unsalted butter, cold and cubed
- 1 cup shredded cheddar cheese
- ¾ cup milk
- 1 tablespoon garlic powder (for a Red Lobster touch)
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, combine cooked chicken, mixed vegetables, cream of chicken soup, 1 teaspoon garlic powder, onion powder, chicken broth, and season with salt and pepper. Mix well and set aside.
- In another bowl, whisk together flour, baking powder, 1 teaspoon salt, and 1 tablespoon garlic powder. Cut in cold cubed butter until mixture resembles coarse crumbs.
- Stir in shredded cheddar cheese. Gradually add milk, mixing until a soft dough forms.
- Pour the chicken filling into a greased 9×13-inch baking dish. Drop biscuit dough by spoonfuls over the top, spreading slightly to cover.
