Ingredients
- 12 oz pasta (penne or rotini)
- 1 lb ground beef or turkey
- 1 can (10 oz) Rotel diced tomatoes and green chilies (undrained)
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1 tsp taco seasoning
- ½ tsp garlic powder
- Salt and pepper, to taste
- Fresh cilantro or parsley (optional, for garnish)
Instructions
- Cook pasta according to package directions; drain and set aside.
- In a large skillet, brown the ground beef or turkey over medium heat until fully cooked. Drain excess fat.
- Add Rotel, heavy cream, taco seasoning, and garlic powder. Stir and simmer for 3–4 minutes.
- Add cooked pasta to the skillet. Stir to combine and heat through.
- Sprinkle shredded cheddar cheese on top and allow it to melt.
- Garnish with fresh cilantro or parsley if desired. Serve warm.
Notes
- Use your favorite pasta shape; rotini or penne works best to hold the sauce.
- For extra creaminess, add a splash of milk or half-and-half.
- Leftovers can be stored in the fridge for up to 3 days.
