Description

ROTEL Pasta Fiesta is a creamy, slightly spicy pasta dish made with ground beef, Rotel tomatoes, cheddar cheese, and a rich seasoned sauce. Itโ€™s a quick and flavorful weeknight dinner that comes together in under 30 minutes.


Ingredients

  • 12 oz pasta (penne or rotini)
  • 1 lb ground beef or turkey
  • 1 can (10 oz) Rotel diced tomatoes and green chilies (undrained)
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 teaspoon taco seasoning
  • ยฝ teaspoon garlic powder
  • Salt and pepper, to taste
  • Fresh cilantro or parsley (optional, for garnish)


Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. In a large skillet over medium heat, cook ground beef until browned. Drain excess fat.
  3. Add taco seasoning and garlic powder to the beef. Stir to combine.
  4. Pour in Rotel (with juices) and heavy cream. Stir well and bring to a gentle simmer.
  5. Add shredded cheddar cheese and stir until melted and creamy.
  6. Mix in cooked pasta and combine thoroughly.
  7. Season with salt and pepper to taste.
  8. Garnish with fresh cilantro or parsley before serving.
