Description

These Savory Asian Noodle Bowls are loaded with tender beef, fresh vegetables, rice noodles, and a rich, umami-packed sauce. This fast and flavorful dish comes together in under 30 minutes and is perfect for busy weeknights.


Ingredients

  • 1 lb ground beef
  • Pinch of white or black pepper
  • 1/2 cup + 1 tablespoon low sodium gluten-free Tamari (or soy sauce)
  • 1/4 cup low sodium chicken broth or water
  • 1 tablespoon rice vinegar
  • 1 tablespoon ginger paste
  • 2 teaspoons sesame oil
  • Pinch red chili flakes (optional)
  • 8 oz stir fry rice noodles
  • 14 oz bag coleslaw mix
  • 1 bunch green onions (green parts cut into 2-inch pieces, white parts sliced)
  • 4 cloves garlic, pressed or minced


Instructions

  1. Cook the rice noodles according to package directions. Drain and set aside.
  2. In a large skillet or wok, cook the ground beef over medium heat. Season with a pinch of pepper and break it apart until browned.
  3. Add the sliced white parts of the green onions and minced garlic. Cook for 1–2 minutes.
  4. In a small bowl, whisk together 1/2 cup Tamari, chicken broth (or water), rice vinegar, ginger paste, sesame oil, and chili flakes.
  5. Add the coleslaw mix and the 2-inch green onion pieces to the skillet. Stir and cook for 2–3 minutes.
  6. Pour in the sauce mixture and stir to combine.
  7. Add the cooked rice noodles and the remaining 1 tablespoon Tamari. Toss until everything is well coated and heated through.
  8. Serve warm and garnish with extra green onions if desired.

Notes

  • You can substitute ground turkey or chicken.
  • Add carrots, snap peas, or mushrooms for extra vegetables.
  • Use gluten-free noodles to keep the recipe fully gluten-free.
