Ingredients

  • 2 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 cup cheddar cheese, shredded
  • 2 cups cooked rice
  • Salt and pepper, to taste
  • ½ cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons butter, melted
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. Heat olive oil in a skillet over medium heat. Add chicken, season with salt and pepper, and cook until lightly browned. Remove and set aside.
  3. In the same skillet, sauté onion until soft, then add garlic and cook for 30 seconds.
  4. Stir in chicken broth, heavy cream, Dijon mustard, thyme, and rosemary. Simmer for 3–4 minutes.
  5. Add cooked rice, chicken, and cheddar cheese. Stir until well combined.
  6. Transfer mixture to the baking dish.
  7. In a small bowl, mix breadcrumbs, Parmesan cheese, and melted butter. Sprinkle evenly over the casserole.
  8. Bake uncovered for 30–35 minutes, until bubbly and golden on top.
  9. Garnish with fresh parsley before serving.
