This Savory Garlic Parmesan Chicken Loaf is a juicy, cheesy twist on the classic chicken meatloaf. Infused with garlic, Parmesan, mozzarella, and Italian seasonings, it’s perfect for a comforting weeknight dinner.
Ingredients
- 1½ lbs ground chicken
- ½ cup breadcrumbs
- ½ cup grated Parmesan cheese
- ½ cup shredded mozzarella cheese (plus extra for topping)
- 3 cloves garlic, minced
- 1 egg
- ¼ cup milk
- 1 tbsp fresh parsley, chopped
- 1 tsp Italian seasoning
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C) and grease a loaf pan.
- In a large bowl, combine ground chicken, breadcrumbs, Parmesan, mozzarella, minced garlic, egg, milk, chopped parsley, Italian seasoning, salt, and pepper. Mix until well combined.
- Transfer the mixture into the prepared loaf pan and shape it evenly.
- Sprinkle extra shredded mozzarella on top if desired.
- Bake for 45–50 minutes, or until the internal temperature reaches 165°F (74°C) and the top is golden.
- Remove from oven and let the loaf rest for 5–10 minutes.
- Slice and garnish with fresh parsley before serving.
Notes
- For extra flavor, add a teaspoon of garlic powder or smoked paprika to the mixture.
- Serve with mashed potatoes or a side salad.
- Leftovers can be reheated in the oven or sliced for sandwiches.
