This Savory Garlic Parmesan Chicken Loaf is a juicy, cheesy twist on the classic chicken meatloaf. Infused with garlic, Parmesan, mozzarella, and Italian seasonings, it’s perfect for a comforting weeknight dinner.


Ingredients

  • lbs ground chicken
  • ½ cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • ½ cup shredded mozzarella cheese (plus extra for topping)
  • 3 cloves garlic, minced
  • 1 egg
  • ¼ cup milk
  • 1 tbsp fresh parsley, chopped
  • 1 tsp Italian seasoning
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat your oven to 375°F (190°C) and grease a loaf pan.
  2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan, mozzarella, minced garlic, egg, milk, chopped parsley, Italian seasoning, salt, and pepper. Mix until well combined.
  3. Transfer the mixture into the prepared loaf pan and shape it evenly.
  4. Sprinkle extra shredded mozzarella on top if desired.
  5. Bake for 45–50 minutes, or until the internal temperature reaches 165°F (74°C) and the top is golden.
  6. Remove from oven and let the loaf rest for 5–10 minutes.
  7. Slice and garnish with fresh parsley before serving.
