This Shrimp & Lobster Cheddar Bay Biscuit Pot Pie is a rich, comforting seafood dinner inspired by the famous biscuits everyone loves. Tender shrimp and sweet lobster are simmered in a creamy Old Bayโ€“seasoned sauce, then topped with fluffy, cheesy garlic biscuits and baked until golden and bubbly.


Ingredients

  • 2 tablespoons unsalted butter
  • 2 garlic cloves, minced
  • 1 small onion, finely chopped
  • 1 stalk celery, diced
  • 2 tablespoons all-purpose flour
  • 1ยฝ cups seafood stock (or chicken stock)
  • ยฝ cup heavy cream
  • 1 teaspoon Old Bay seasoning
  • ยฝ teaspoon salt
  • ยผ teaspoon black pepper
  • ยฝ lb shrimp, peeled and deveined
  • ยฝ lb cooked lobster meat, chopped
  • 1 tablespoon chopped fresh parsley
  • For the Biscuit Topping:
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ยฝ teaspoon garlic powder
  • ยผ teaspoon salt
  • 2 tablespoons cold butter, grated
  • ยฝ cup shredded sharp cheddar cheese
  • โ…“ cup whole milk (plus 1 tablespoon if needed)
  • 1 tablespoon chopped fresh chives or parsley (optional)


Instructions

  1. Preheat oven to 400ยฐF (200ยฐC).
  2. In an oven-safe skillet, melt butter over medium heat. Add garlic, onion, and celery; sautรฉ until soft.
  3. Stir in flour and cook for 1 minute. Slowly whisk in stock until smooth.
  4. Add cream, Old Bay, salt, and pepper. Simmer until slightly thickened.
  5. Add shrimp and lobster; cook 2โ€“3 minutes until shrimp are just opaque. Remove from heat and stir in parsley.
  6. In a bowl, mix flour, baking powder, garlic powder, and salt. Cut in butter, then stir in cheese and milk.
  7. Drop biscuit dough by spoonfuls over the filling.
  8. Bake for 18โ€“22 minutes until biscuits are golden and filling is bubbly. Rest 5 minutes before serving.
