Description

This Simple Dill Pickle Pasta Salad is creamy, tangy, and packed with bold pickle flavor. Made with rotini pasta, colby jack cheese, crunchy pickles, and a rich dill-infused dressing, itโ€™s the perfect easy side dish for BBQs, potlucks, or quick lunches.


Ingredients

  • 1 box rotini noodles
  • 8 oz colby jack cheese, diced into 1/4-inch cubes
  • 2 cups chopped dill pickles (about 1/2-inch pieces)
  • 1 small white onion, finely minced
  • 1/3 cup dill pickle brine
  • For the dressing:
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 2 tbsp fresh dill (or 1 tbsp dried dill)
  • 1/3 cup dill pickle liquid
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper


Instructions

  1. Cook rotini pasta in salted water according to package instructions. Drain and rinse with cold water.
  2. In a large bowl, combine cooked pasta, diced cheese, chopped pickles, and minced onion.
  3. In a separate bowl, whisk together mayonnaise, sour cream, dill, pickle liquid, salt, and black pepper.
  4. Pour dressing over the pasta mixture and toss until evenly coated.
  5. Cover and refrigerate for at least 1 hour before serving to allow flavors to blend.
  6. Stir before serving and garnish with extra dill if desired.

Notes

  • For extra tang, add more pickle juice to taste.
  • This salad tastes even better the next day.
