Description

Slow Cooker Beef and Broccoli is a tender, savory dish perfect for weeknight dinners. The beef simmers in a rich, garlicky soy-ginger sauce until tender, then tossed with crisp-tender broccoli. Serve over steamed rice and garnish with sesame seeds for a restaurant-quality meal at home.


Ingredients

  • 1.5 lbs beef flank steak, thinly sliced (or beef chuck, cut into 1-inch cubes for slow cooker)
  • 4 cups broccoli florets
  • 1/2 cup soy sauce (low sodium recommended)
  • 1/4 cup brown sugar, packed
  • 1/4 cup beef broth
  • 3 cloves garlic, minced
  • 1 tsp grated ginger
  • 1 tbsp cornstarch (optional, for thickening)
  • 12 tbsp cold water (for cornstarch slurry, if using)
  • Cooked rice, for serving
  • Sesame seeds, for garnish


Instructions

  1. Place sliced beef into the slow cooker.
  2. In a bowl, mix soy sauce, brown sugar, beef broth, garlic, and ginger. Pour over beef.
  3. Cover and cook on LOW for 5–6 hours or HIGH for 2–3 hours, until beef is tender.
  4. About 30 minutes before serving, add broccoli florets on top. Cover and cook until broccoli is tender-crisp.
  5. If desired, mix cornstarch with cold water to make a slurry. Stir into slow cooker to thicken sauce and cook an additional 5 minutes.
  6. Serve over cooked rice and garnish with sesame seeds.

  • Thinly slicing the beef against the grain ensures maximum tenderness.
  • Use low-sodium soy sauce to control saltiness.
  • Optional cornstarch slurry thickens the sauce beautifully, but you can skip for a lighter dish.
