Description
Slow Cooker Beef and Broccoli is a tender, savory dish perfect for weeknight dinners. The beef simmers in a rich, garlicky soy-ginger sauce until tender, then tossed with crisp-tender broccoli. Serve over steamed rice and garnish with sesame seeds for a restaurant-quality meal at home.
Ingredients
- 1.5 lbs beef flank steak, thinly sliced (or beef chuck, cut into 1-inch cubes for slow cooker)
- 4 cups broccoli florets
- 1/2 cup soy sauce (low sodium recommended)
- 1/4 cup brown sugar, packed
- 1/4 cup beef broth
- 3 cloves garlic, minced
- 1 tsp grated ginger
- 1 tbsp cornstarch (optional, for thickening)
- 1–2 tbsp cold water (for cornstarch slurry, if using)
- Cooked rice, for serving
- Sesame seeds, for garnish
Instructions
- Place sliced beef into the slow cooker.
- In a bowl, mix soy sauce, brown sugar, beef broth, garlic, and ginger. Pour over beef.
- Cover and cook on LOW for 5–6 hours or HIGH for 2–3 hours, until beef is tender.
- About 30 minutes before serving, add broccoli florets on top. Cover and cook until broccoli is tender-crisp.
- If desired, mix cornstarch with cold water to make a slurry. Stir into slow cooker to thicken sauce and cook an additional 5 minutes.
- Serve over cooked rice and garnish with sesame seeds.
Notes
- Thinly slicing the beef against the grain ensures maximum tenderness.
- Use low-sodium soy sauce to control saltiness.
- Optional cornstarch slurry thickens the sauce beautifully, but you can skip for a lighter dish.
