Slow Cooker Beef Manhattan is a comforting, savory dish featuring tender beef chunks slowly simmered with onions, garlic, and aromatic herbs in a rich beef broth. Thickened with a cornstarch slurry, it’s perfect served over mashed potatoes or buttered noodles.
Ingredients
- 2 lbs beef chuck roast, cut into 2-inch chunks
- 2 medium yellow onions, thinly sliced
- 2 cups low-sodium beef broth
- 4 cloves garlic, minced
- 2 tbsp Worcestershire sauce
- 1 tsp fresh thyme (or ½ tsp dried)
- 1 tsp fresh rosemary (or ½ tsp dried)
- 2 tbsp cornstarch mixed with 2 tbsp cold water (for thickening)
Instructions
- Place beef chunks in the slow cooker.
- Add sliced onions, garlic, Worcestershire sauce, thyme, and rosemary. Pour in beef broth.
- Cover and cook on LOW for 8 hours or HIGH for 4–5 hours, until beef is tender.
- Mix cornstarch with cold water to make a slurry. Stir into slow cooker and cook an additional 15–20 minutes to thicken sauce.
- Serve hot over mashed potatoes, rice, or noodles.
Notes
- For deeper flavor, sear beef chunks in a hot pan before adding to the slow cooker.
- Adjust herbs to your taste; thyme and rosemary can be reduced if preferred milder.
