This Slow Cooker Cajun Potato Soup is creamy, flavorful, and perfect for chilly days. Packed with potatoes, bell pepper, celery, and a touch of Cajun spice, it’s an easy soup that cooks itself in the slow cooker.
Ingredients
- 6 cups peeled and diced potatoes
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, chopped (any color)
- 2 celery stalks, diced
- 1 teaspoon smoked paprika
- 1 teaspoon Cajun seasoning (more to taste)
- ½ teaspoon dried thyme
- Salt and pepper to taste
- 4 cups chicken or vegetable broth
- 1 cup heavy cream or half-and-half
- 1 tablespoon butter
- ½ cup shredded cheddar cheese (optional)
- ¼ cup chopped green onions (for garnish)
- ¼ teaspoon cayenne pepper (optional, for heat)
Instructions
- Place potatoes, onion, garlic, bell pepper, and celery in a slow cooker.
- Add smoked paprika, Cajun seasoning, dried thyme, salt, and pepper. Stir to combine.
- Pour in the chicken or vegetable broth.
- Cover and cook on low for 6–7 hours or on high for 3–4 hours, until potatoes are tender.
- Stir in heavy cream and butter until creamy. Adjust seasoning if needed.
- Optional: sprinkle cheddar cheese over the top before serving and garnish with chopped green onions and cayenne pepper.
Notes
- Use more or less Cajun seasoning depending on your spice preference.
- For a thicker soup, mash a few of the potatoes before adding the cream.
- Leftovers store well in the fridge for up to 3 days.
