Description

Slow Cooker Cowboy Casserole is a hearty, flavorful one-pot meal packed with ground beef, vegetables, beans, and potatoes. Comfort food at its best, made simple in your slow cooker for easy weeknight dinners.


Ingredients

  • 1 lb ground beef
  • 1 cup frozen corn
  • 3 cloves garlic, minced
  • 1 can kidney beans, drained and rinsed
  • 1 medium onion, chopped
  • 4 cups potatoes, diced
  • 1 can tomatoes with green chilies
  • 1 can condensed cream of mushroom soup
  • ¼ tsp black pepper
  • 1 tsp chili powder
  • ½ tsp salt
  • 1 cup shredded cheese
  • ½ cup milk


Instructions

  1. In a skillet, brown the ground beef over medium heat, drain excess fat, and set aside.
  2. Add all ingredients except cheese and milk to the slow cooker and stir to combine.
  3. Cover and cook on low for 6–8 hours or on high for 3–4 hours, until potatoes are tender.
  4. Stir in milk and top with shredded cheese. Let sit for 5 minutes to melt the cheese before serving.
