Ingredients
- 1 lb ground beef
- 1 cup frozen corn
- 3 cloves garlic, minced
- 1 can kidney beans, drained and rinsed
- 1 medium onion, chopped
- 4 cups potatoes, diced
- 1 can tomatoes with green chilies
- 1 can condensed cream of mushroom soup
- ¼ tsp black pepper
- 1 tsp chili powder
- ½ tsp salt
- 1 cup shredded cheese
- ½ cup milk
Instructions
- In a skillet, brown the ground beef over medium heat, drain excess fat, and set aside.
- Add all ingredients except cheese and milk to the slow cooker and stir to combine.
- Cover and cook on low for 6–8 hours or on high for 3–4 hours, until potatoes are tender.
- Stir in milk and top with shredded cheese. Let sit for 5 minutes to melt the cheese before serving.
Notes
- Add extra chili powder or cayenne for a spicier kick.
- Use leftover cooked potatoes or canned potatoes to save time.
- Leftovers can be refrigerated and reheat well for next-day meals.
