Description
Tender beef chuck roast slow-cooked in a flavorful broth with red wine, garlic, and herbs, served on hoagie rolls with melted provolone or Swiss cheese. Perfect for a hearty French Dip sandwich experience.
Ingredients
- 2 lbs beef chuck roast
- 1 tablespoon olive oil
- 1 large onion, sliced
- 4 cloves garlic, minced
- 1 cup beef broth
- 1 cup dry red wine (such as Cabernet Sauvignon)
- 1 tablespoon Worcestershire sauce
- 1 tablespoon soy sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 4-6 hoagie rolls or French baguette
- Sliced provolone or Swiss cheese (optional)
- Fresh basil or parsley for garnish (optional)
Instructions
- Heat olive oil in a skillet over medium-high heat. Brown the beef roast on all sides, then transfer to slow cooker.
- Add sliced onion and minced garlic to the slow cooker.
- Pour in beef broth, red wine, Worcestershire sauce, and soy sauce.
- Sprinkle thyme, rosemary, salt, and pepper over the top.
- Cover and cook on low for 8 hours or high for 4-5 hours, until beef is tender and shreds easily.
- Remove beef from slow cooker, shred with two forks.
- Serve shredded beef on hoagie rolls with provolone or Swiss cheese. Optionally, garnish with fresh basil or parsley.
- Use the cooking juices as dip for sandwiches.
Notes
- For thicker jus, strain the cooking liquid and reduce it on stovetop.
- Can be made a day ahead for deeper flavor.
- Serve with au jus on the side for dipping.
