This Slow Cooker Garlic Butter Chicken and Veggies is a simple, hearty, and flavorful one-pot meal. Tender chicken, buttery potatoes, and sweet baby carrots cook together with garlic and herbs for an effortless weeknight dinner.
Ingredients
- 1 1/2 lbs boneless skinless chicken tenders
- 1 lb baby carrots
- 1 1/2 lbs Yukon gold potatoes, cut into wedges
- 1/2 cup salted butter, melted
- 1 Tbsp minced garlic
- Salt and pepper to taste
- 1 tsp dried thyme leaves
- 1 tsp dried parsley
Instructions
- Place chicken tenders in the slow cooker.
- Add baby carrots and potato wedges around the chicken.
- In a small bowl, mix melted butter, minced garlic, salt, pepper, thyme, and parsley.
- Pour the garlic butter mixture over the chicken and vegetables.
- Cover and cook on low for 6โ7 hours or on high for 3โ4 hours until chicken is cooked through and vegetables are tender.
- Serve warm, garnished with extra parsley if desired.
Notes
- For extra flavor, sear the chicken in a skillet before adding it to the slow cooker.
- You can add other veggies like green beans or bell peppers if desired.
