This Slow Cooker Garlic Butter Chicken and Veggies is a simple, hearty, and flavorful one-pot meal. Tender chicken, buttery potatoes, and sweet baby carrots cook together with garlic and herbs for an effortless weeknight dinner.


Ingredients

  • 1 1/2 lbs boneless skinless chicken tenders
  • 1 lb baby carrots
  • 1 1/2 lbs Yukon gold potatoes, cut into wedges
  • 1/2 cup salted butter, melted
  • 1 Tbsp minced garlic
  • Salt and pepper to taste
  • 1 tsp dried thyme leaves
  • 1 tsp dried parsley


Instructions

  1. Place chicken tenders in the slow cooker.
  2. Add baby carrots and potato wedges around the chicken.
  3. In a small bowl, mix melted butter, minced garlic, salt, pepper, thyme, and parsley.
  4. Pour the garlic butter mixture over the chicken and vegetables.
  5. Cover and cook on low for 6โ€“7 hours or on high for 3โ€“4 hours until chicken is cooked through and vegetables are tender.
