This Slow Cooker Honey Garlic Chicken and Veggies is a wholesome, flavorful one-pot meal perfect for busy weeknights. Tender chicken thighs, baby potatoes, carrots, and green beans are cooked in a sweet and savory honey garlic sauce, making mealtime effortless and delicious.


Ingredients

  • 8 bone-in, skin-on chicken thighs
  • 16 ounces baby red potatoes, halved
  • 16 ounces baby carrots
  • 16 ounces green beans, trimmed
  • 2 tablespoons chopped fresh parsley leaves (for garnish)
  • For the sauce:
  • ½ cup reduced sodium soy sauce
  • ½ cup honey
  • ¼ cup ketchup
  • 2 cloves garlic, minced
  • 1 teaspoon dried basil
  • ½ teaspoon dried oregano
  • ¼ teaspoon crushed red pepper flakes
  • ¼ teaspoon ground black pepper


Instructions

  1. Place the chicken thighs at the bottom of the slow cooker.
  2. Add halved baby potatoes, baby carrots, and trimmed green beans on top of the chicken.
  3. In a small bowl, whisk together soy sauce, honey, ketchup, garlic, basil, oregano, red pepper flakes, and black pepper.
  4. Pour the sauce evenly over the chicken and vegetables.
  5. Cover and cook on Low for 6–7 hours or High for 3–4 hours, until chicken is cooked through and vegetables are tender.
  6. Garnish with chopped fresh parsley before serving and enjoy warm.
