Ingredients
- 4 boneless, skinless chicken breasts
- 1 ยฝ cups long-grain white rice
- 2 cups chicken broth
- 1 cup freshly squeezed lemon juice
- 2 teaspoons dried thyme
- 2 teaspoons dried oregano
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 1 lemon, sliced (for garnish)
- Fresh parsley, chopped (for garnish)
Instructions
- Lightly grease the slow cooker with olive oil.
- Season the chicken breasts with salt, pepper, garlic powder, onion powder, thyme, and oregano.
- Add rice to the bottom of the slow cooker.
- Pour in chicken broth and lemon juice, stirring gently to combine with the rice.
- Place seasoned chicken breasts on top of the rice mixture.
- Cover and cook on LOW for 4โ5 hours or HIGH for 2โ3 hours, until chicken is cooked through and rice is tender.
- Remove chicken, fluff the rice, then return chicken to the slow cooker.
- Garnish with fresh lemon slices and chopped parsley before serving.
Notes
- For extra creaminess, stir in ยผ cup grated Parmesan before serving.
- Do not overcook, as rice can become too soft in the slow cooker.
