Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 ยฝ cups long-grain white rice
  • 2 cups chicken broth
  • 1 cup freshly squeezed lemon juice
  • 2 teaspoons dried thyme
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 lemon, sliced (for garnish)
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Lightly grease the slow cooker with olive oil.
  2. Season the chicken breasts with salt, pepper, garlic powder, onion powder, thyme, and oregano.
  3. Add rice to the bottom of the slow cooker.
  4. Pour in chicken broth and lemon juice, stirring gently to combine with the rice.
  5. Place seasoned chicken breasts on top of the rice mixture.
  6. Cover and cook on LOW for 4โ€“5 hours or HIGH for 2โ€“3 hours, until chicken is cooked through and rice is tender.
  7. Remove chicken, fluff the rice, then return chicken to the slow cooker.
  8. Garnish with fresh lemon slices and chopped parsley before serving.

Notes

  • For extra creaminess, stir in ยผ cup grated Parmesan before serving.
