Ingredients

  • 4 boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 lemon, juiced and zested
  • 4 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper, to taste
  • Fresh parsley, for garnish


Instructions

  1. Place chicken thighs in the slow cooker.
  2. Add rice, chicken broth, lemon juice and zest, garlic, thyme, rosemary, salt, and pepper.
  3. Stir gently to combine ingredients.
  4. Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until chicken is fully cooked and rice is tender.
  5. Garnish with fresh parsley before serving.
