This Slow Cooker Street Corn Chicken brings all the bold, creamy, and zesty flavors of Mexican street corn straight to your crockpot! Tender chicken, sweet corn, and a creamy, cheesy sauce make for an effortless yet irresistible dinner.
Ingredients
- 2–3 boneless chicken breasts (or thighs for extra juiciness)
- 2 cups corn (frozen, canned, or fresh grilled)
- 4 oz cream cheese, cubed
- 1/3 cup cotija cheese (or feta as substitute)
- Juice of 1 lime
- 2 garlic cloves, minced
- 1/2 tsp chili powder
- 1/2 tsp smoked paprika (optional)
- 1/2 tsp onion powder (optional)
- Fresh cilantro, for garnish (optional)
Instructions
- Place chicken breasts in the slow cooker.
- Add corn, cream cheese, cotija, lime juice, minced garlic, chili powder, smoked paprika, and onion powder (if using) over the chicken.
- Cover and cook on LOW for 4–6 hours or on HIGH for 2–3 hours, until chicken is cooked through and tender.
- Before serving, stir the mixture gently to combine the sauce and chicken.
- Garnish with fresh cilantro if desired and serve warm.

- For extra flavor, grill the corn before adding to the slow cooker.
