Description

Slow Cooker Street Corn Chicken is a creamy, tangy, flavor-packed dish that brings the magic of Mexican street corn to juicy chicken. Let your crockpot do the work while smoky spices, creamy cheese, and fresh lime create a meal that tastes like summer any time of year.


Ingredients

  • 23 boneless chicken breasts (or thighs for juicier flavor)
  • 2 cups corn (frozen, canned, or grilled for extra charred street-corn vibes)
  • 4 oz cream cheese, cubed (Tofutti/Kite Hill for vegan)
  • 1/3 cup cotija cheese (or feta if needed)
  • Juice of 1 lime, fresh squeezed
  • 2 garlic cloves, minced
  • 1/2 tsp chili powder
  • Optional Boosters: 1/2 tsp smoked paprika, fresh cilantro, 1/2 tsp onion powder


Instructions

  1. Place chicken breasts in the slow cooker.
  2. Add corn, cream cheese, cotija, lime juice, garlic, and chili powder. Include any optional boosters you like.
  3. Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until the chicken is fully cooked and tender.
  4. Shred chicken directly in the slow cooker and stir everything together until creamy and well combined.
  5. Serve warm topped with extra cotija, cilantro, and a squeeze of fresh lime.

Notes

  • For extra street corn flavor, use grilled corn if it’s in season.
  • Thighs give a richer result, while breasts keep it lean.
