Ingredients
- 2–3 boneless chicken breasts (or thighs for juicier flavor)
- 2 cups corn (frozen, canned, or grilled for extra charred street-corn vibes)
- 4 oz cream cheese, cubed (Tofutti/Kite Hill for vegan)
- 1/3 cup cotija cheese (or feta if needed)
- Juice of 1 lime, fresh squeezed
- 2 garlic cloves, minced
- 1/2 tsp chili powder
- Optional Boosters: 1/2 tsp smoked paprika, fresh cilantro, 1/2 tsp onion powder
Instructions
- Place chicken breasts in the slow cooker.
- Add corn, cream cheese, cotija, lime juice, garlic, and chili powder. Include any optional boosters you like.
- Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until the chicken is fully cooked and tender.
- Shred chicken directly in the slow cooker and stir everything together until creamy and well combined.
- Serve warm topped with extra cotija, cilantro, and a squeeze of fresh lime.
