Description

Slow Cooker Unstuffed Cabbage Rolls are a comforting, hearty dinner made with ground beef, tender cabbage, tomatoes, and savory herbs. All the classic cabbage roll flavors without the rollingโ€”just toss everything in the slow cooker and let it simmer to perfection.

Ingredients

  • 1 pound ground beef
  • 1 yellow onion, diced
  • 1 small head green cabbage, chopped
  • 1 (14-ounce) can petite diced tomatoes
  • 1 (6-ounce) can tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 2 teaspoons dried parsley
  • 1/4 teaspoon red pepper flakes
  • 1 teaspoon kosher salt
  • 1/2 cup water

Instructions

  1. In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess grease.
  2. Add diced onion and cook for 2โ€“3 minutes until softened.
  3. Transfer beef and onion mixture to the slow cooker.
  4. Add chopped cabbage, diced tomatoes, tomato paste, Worcestershire sauce, thyme, parsley, red pepper flakes, salt, and water.
  5. Stir well to combine.
  6. Cover and cook on LOW for 6โ€“7 hours or HIGH for 3โ€“4 hours, until cabbage is tender.
  7. Stir before serving and adjust seasoning if needed.

Notes

  • Serve with rice or crusty bread for a complete meal.
  • Swap ground beef for ground turkey for a lighter option.
  • Leftovers store well in the fridge for up to 4 days.
