This Southwestern Chicken Salad is a protein-packed, flavorful dish perfect for lunch, dinner, or meal prep. Creamy Greek yogurt dressing combined with smoky spices and fresh veggies makes this salad vibrant and satisfying.


Ingredients

  • 1 lb boneless, skinless chicken breast
  • Kosher salt & black pepper, to taste
  • 1 cup full-fat plain Greek yogurt or skyr
  • 2 tbsp lime juice
  • ¾ tsp ground cumin
  • ¾ tsp chili powder
  • ¾ tsp smoked paprika
  • Cayenne pepper (optional), to taste
  • ¾ cup black beans
  • ½ cup finely diced red bell pepper
  • ½ cup corn (fire-roasted preferred)
  • ¼ cup finely diced red onion
  • ¼ cup chopped cilantro


Instructions

  1. Season chicken breasts with salt and pepper, then cook until fully cooked. Allow to cool and dice or shred.
  2. In a large bowl, whisk together Greek yogurt, lime juice, cumin, chili powder, smoked paprika, and cayenne if using.
  3. Add cooked chicken, black beans, red bell pepper, corn, red onion, and cilantro. Mix until well combined.
  4. Adjust seasoning with salt and pepper if needed. Chill for 10–15 minutes for flavors to meld.
  5. Serve as a salad, in wraps, or over greens. Enjoy!
