Description
Spinach Stuffed Chicken breasts filled with a creamy mixture of cream cheese, Parmesan, mayonnaise, garlic, and fresh spinach, seasoned with paprika, garlic powder, onion powder, and a touch of heat from red pepper flakes.
Ingredients
- 4 chicken breasts
- 1 tablespoon olive oil or avocado oil
- 1 teaspoon paprika
- 1 teaspoon salt, divided
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- 4 ounces cream cheese, softened
- ¼ cup grated Parmesan
- 2 tablespoons mayonnaise
- 1 ½ cups chopped fresh spinach
- 1 teaspoon minced garlic
- ½ teaspoon red pepper flakes
Instructions
- Preheat oven to 375°F (190°C). Grease a baking dish.
- In a bowl, mix cream cheese, Parmesan, mayonnaise, spinach, minced garlic, and red pepper flakes until combined.
- Cut a pocket into each chicken breast, season inside and out with half the salt, paprika, garlic powder, and onion powder.
- Stuff each chicken breast with the spinach mixture and secure with toothpicks if needed.
- Brush chicken breasts with olive or avocado oil and season with remaining salt.
- Bake for 25–30 minutes or until chicken is cooked through and juices run clear.
- Remove toothpicks before serving.
Notes
- Fresh spinach adds a vibrant flavor, but you can substitute with frozen spinach (thawed and drained).
- Serve with a side of roasted vegetables or a fresh salad.
- Use a meat thermometer to ensure chicken reaches 165°F (74°C) internally.
