Description

Spinach Stuffed Chicken breasts filled with a creamy mixture of cream cheese, Parmesan, mayonnaise, garlic, and fresh spinach, seasoned with paprika, garlic powder, onion powder, and a touch of heat from red pepper flakes.


Ingredients

  • 4 chicken breasts
  • 1 tablespoon olive oil or avocado oil
  • 1 teaspoon paprika
  • 1 teaspoon salt, divided
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 4 ounces cream cheese, softened
  • ¼ cup grated Parmesan
  • 2 tablespoons mayonnaise
  • 1 ½ cups chopped fresh spinach
  • 1 teaspoon minced garlic
  • ½ teaspoon red pepper flakes


Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish.
  2. In a bowl, mix cream cheese, Parmesan, mayonnaise, spinach, minced garlic, and red pepper flakes until combined.
  3. Cut a pocket into each chicken breast, season inside and out with half the salt, paprika, garlic powder, and onion powder.
  4. Stuff each chicken breast with the spinach mixture and secure with toothpicks if needed.
  5. Brush chicken breasts with olive or avocado oil and season with remaining salt.
  6. Bake for 25–30 minutes or until chicken is cooked through and juices run clear.
  7. Remove toothpicks before serving.

Notes

  • Fresh spinach adds a vibrant flavor, but you can substitute with frozen spinach (thawed and drained).
  • Serve with a side of roasted vegetables or a fresh salad.
  • Use a meat thermometer to ensure chicken reaches 165°F (74°C) internally.
