Ingredients
- 1 cup sugar
- 1 cup light brown sugar, packed
- 1 cup vegetable oil or melted butter
- 4 large eggs
- 1 ½ cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 teaspoon vanilla extract
- 2 cups chopped pecans
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- In a large bowl, combine sugar, brown sugar, and oil (or melted butter). Mix well.
- Add eggs, one at a time, beating well after each addition. Stir in vanilla extract.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add dry ingredients to the wet mixture, mixing until just combined.
- Fold in chopped pecans gently.
- Pour batter into prepared pan and bake for 35–40 minutes, or until a toothpick inserted comes out clean.
- Cool in the pan for 10 minutes before slicing and serving.

- Substitute half of the vegetable oil with melted butter for a richer flavor.
