Ingredients
- 4 boneless skinless chicken breasts (about 6โ8 oz each)
- 2 tablespoons olive oil or butter
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ยฝ teaspoon salt
- ยฝ teaspoon black pepper
- 1 cup sliced mushrooms
- 1 small onion, thinly sliced
- 1 cup shredded mozzarella cheese or Monterey Jack
- ยฝ cup shredded cheddar cheese
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 375ยฐF (190ยฐC).
- Season chicken breasts with paprika, garlic powder, onion powder, salt, and pepper.
- Heat olive oil or butter in a large skillet over medium-high heat. Sear chicken on both sides until golden, about 3โ4 minutes per side. Remove and set aside.
- In the same skillet, sautรฉ mushrooms and onions until tender and fragrant, about 5 minutes.
- Place chicken in a baking dish, top with sautรฉed mushrooms and onions.
- Sprinkle mozzarella and cheddar cheese evenly over the top.
- Bake in the preheated oven for 15โ20 minutes, until chicken is cooked through and cheese is melted.
- Garnish with chopped parsley and serve warm.
