Ingredients
- 2 cups cooked shredded chicken
- ½ cup creamy peanut butter
- ¼ cup soy sauce
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon minced garlic
- 1 teaspoon grated ginger
- 4 large lettuce leaves (romaine or butter lettuce)
- 1 cup shredded carrots
- 1 cup sliced bell peppers (any color)
- ½ cup chopped fresh cilantro
- ¼ cup chopped peanuts (optional)
Instructions
- In a bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger until smooth.
- Add shredded chicken to the sauce and toss until evenly coated.
- Lay lettuce leaves flat and spoon the peanut chicken mixture into each one.
- Top with shredded carrots, bell peppers, cilantro, and peanuts if using.
- Wrap like a taco or roll gently and serve immediately.
