This Tomato Soup and Grilled Cheese Casserole combines two classic comfort foods into one warm, cheesy, oven-baked dish. With layers of buttery bread, rich cheeses, and a creamy tomato base, itโ€™s perfect for an easy family dinner.


Ingredients

  • 6 slices of bread
  • 4 tablespoons butter, divided
  • 6 ounces cream cheese, softened
  • 12 slices Cheddar cheese
  • 1 (10.75 ounce) can tomato soup
  • 2 cups tomato juice
  • 2 large eggs
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1 large tomato, chopped
  • 1 cup shredded Italian blend cheese


Instructions

  1. Preheat oven to 375ยฐF (190ยฐC) and grease a baking dish.
  2. Butter the bread slices and cut them into halves or quarters.
  3. Place half of the bread in the baking dish and layer with cream cheese and Cheddar slices.
  4. In a bowl, whisk together tomato soup, tomato juice, eggs, Italian seasoning, and garlic powder.
  5. Pour half of the tomato mixture over the bread and cheese.
  6. Add chopped tomato and remaining bread, then pour the rest of the soup mixture on top.
  7. Sprinkle shredded Italian blend cheese evenly over the casserole.
  8. Bake uncovered for 35โ€“40 minutes, until set and golden on top.
  9. Let rest for 5 minutes before serving.
