Ingredients
- 1 cup fresh blueberries
- 1 ripe mango, peeled and diced
- 1/2 cup diced cucumber
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh mint
- 1/4 cup crumbled feta cheese (optional)
- Mixed greens or baby spinach, for serving
- 1 tbsp lime juice
- 1 tbsp orange juice
- 1 tsp honey or agave syrup
- Salt and pepper to taste
Instructions
- In a large bowl, combine blueberries, mango, cucumber, red onion, and mint.
- In a small bowl, whisk together lime juice, orange juice, honey, salt, and pepper.
- Pour dressing over the fruit and vegetable mixture and toss gently.
- Add crumbled feta cheese if using and mix lightly.
- Serve over a bed of mixed greens or baby spinach.
- Chill for 10 minutes before serving for enhanced flavor.
