Description

Cabbage Roll Soup is a hearty one-pot dinner packed with lean ground beef, tender cabbage, carrots, tomatoes, and rice. It has all the comforting flavors of classic cabbage rolls in an easy, cozy soup.


Ingredients

  • 2 teaspoons vegetable oil
  • 1 lb lean ground beef
  • Salt and pepper, to taste
  • 1 medium yellow onion, finely diced
  • 2 cloves garlic, minced
  • 4 cups chopped green cabbage
  • 2 medium carrots, quartered and sliced
  • 4 cups low-sodium beef broth
  • 3 (8 oz) cans tomato sauce
  • 1/2 cup uncooked white rice
  • 1 bay leaf
  • 3 tablespoons light brown sugar
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Heat the vegetable oil in a large pot or Dutch oven over medium-high heat.
  2. Add the lean ground beef and season with salt and pepper. Cook, breaking the beef apart with a spoon, until browned and cooked through.
  3. Add the finely diced onion and cook for 3-4 minutes, until softened.
  4. Stir in the minced garlic and cook for about 30 seconds, until fragrant.
  5. Add the chopped cabbage and sliced carrots. Stir and cook for 2-3 minutes to begin softening the vegetables.
  6. Pour in the beef broth and tomato sauce. Stir well to combine.
  7. Add the uncooked rice, bay leaf, and light brown sugar. Season with additional salt and pepper to taste.
  8. Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 25-30 minutes, stirring occasionally, until the rice and vegetables are tender.
  9. Remove the bay leaf and discard it.
  10. Stir in the fresh chopped parsley and taste. Adjust the seasoning with additional salt and pepper if needed.
  11. Ladle the soup into bowls and serve hot, garnished with extra fresh parsley if desired.

Notes

  • Use lean ground beef to keep the soup hearty without making it overly greasy.
  • Rinse the rice if desired before adding it to the soup for a slightly lighter texture.
  • The rice will continue absorbing liquid as the soup sits, so add a little extra beef broth when reheating if needed.
  • For a thicker soup, simmer uncovered for a few extra minutes.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
