Cattle Drive Casserole is a hearty Tex-Mex-inspired family dinner loaded with seasoned ground beef, peppers, onions, green chiles, cheese, and a fluffy biscuit topping. Finished with a creamy, cheesy layer and baked until golden, it’s the perfect comfort-food casserole for busy weeknights.
Ingredients
- 1.5 pounds lean ground beef
- 1 red bell pepper, seeded and chopped
- 1 yellow onion, chopped
- 1 ounce taco seasoning mix
- 2ยฝ cups biscuit mix (such as Bisquick)
- 1 cup water
- Cooking spray
- ยฝ cup sour cream
- ยฝ cup mayonnaise
- 4 ounces diced green chiles, drained
- 1ยฝ cups cheddar cheese or Fiesta blend cheese, shredded, divided
- 1 teaspoon garlic powder
- ยฝ cup mild salsa
Instructions
- Preheat oven to 375ยฐF (190ยฐC). Lightly coat a 9×13-inch casserole dish with cooking spray.
- In a large skillet over medium-high heat, cook the ground beef, bell pepper, and onion until the beef is browned and vegetables are softened. Drain excess grease if needed.
- Stir in the taco seasoning and salsa. Cook for 2 minutes, then remove from heat.
- Spread the beef mixture evenly into the prepared casserole dish.
- In a medium bowl, whisk together the biscuit mix and water until combined. Pour over the beef layer.
- Bake for 20 minutes.
- Meanwhile, in another bowl, mix together sour cream, mayonnaise, green chiles, garlic powder, and 1 cup of the shredded cheese.
- Remove casserole from oven and carefully spread the sour cream mixture over the biscuit layer.
- Sprinkle the remaining ยฝ cup cheese over the top.
- Return to the oven and bake for an additional 15โ20 minutes, until golden and bubbly.
- Let stand for 5 minutes before serving.

- Use spicy taco seasoning for extra heat.
- Pepper Jack cheese can be substituted for a spicier flavor.
- Serve with extra salsa, sour cream, or sliced jalapeรฑos.
