Ingredients

  • 1.5 pounds lean ground beef
  • 1 red bell pepper, seeded and chopped
  • 1 yellow onion, chopped
  • 1 ounce taco seasoning mix
  • 2ยฝ cups biscuit mix (such as Bisquick)
  • 1 cup water
  • Cooking spray
  • ยฝ cup sour cream
  • ยฝ cup mayonnaise
  • 4 ounces diced green chiles, drained
  • 1ยฝ cups cheddar cheese or Fiesta blend cheese, shredded, divided
  • 1 teaspoon garlic powder
  • ยฝ cup mild salsa


Instructions

  1. Preheat oven to 375ยฐF (190ยฐC). Lightly coat a 9×13-inch casserole dish with cooking spray.
  2. In a large skillet over medium-high heat, cook the ground beef, bell pepper, and onion until the beef is browned and vegetables are softened. Drain excess grease if needed.
  3. Stir in the taco seasoning and salsa. Cook for 2 minutes, then remove from heat.
  4. Spread the beef mixture evenly into the prepared casserole dish.
  5. In a medium bowl, whisk together the biscuit mix and water until combined. Pour over the beef layer.
  6. Bake for 20 minutes.
  7. Meanwhile, in another bowl, mix together sour cream, mayonnaise, green chiles, garlic powder, and 1 cup of the shredded cheese.
  8. Remove casserole from oven and carefully spread the sour cream mixture over the biscuit layer.
  9. Sprinkle the remaining ยฝ cup cheese over the top.
  10. Return to the oven and bake for an additional 15โ€“20 minutes, until golden and bubbly.
  11. Let stand for 5 minutes before serving.
