Ingredients
- For the Basmati Rice:
- 1 cup basmati rice
- 1 ยพ cups water
- 1 tablespoon butter or olive oil
- ยฝ teaspoon salt
- For the Creamy Herb Chicken:
- 4 boneless, skinless chicken breasts (or thighs)
- 2 tablespoons olive oil
- 2 tablespoons butter
- 3 garlic cloves, minced
- 1 small onion, finely chopped
- 1 teaspoon dried Italian herbs
- ยฝ teaspoon paprika
- 1 teaspoon salt (to taste)
- ยฝ teaspoon black pepper
- 1 cup chicken broth
- ยพ cup heavy cream
- ยผ cup grated parmesan cheese (optional)
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh dill or basil (optional)
- Juice of half a lemon
Instructions
- Rinse basmati rice until water runs clear. Cook with water, butter, and salt. Set aside.
- Season chicken with salt, pepper, paprika, and Italian herbs.
- Heat olive oil and butter in a large pan over medium heat.
- Cook chicken until golden on both sides and cooked through. Remove and set aside.
- In the same pan, sautรฉ onion until soft, then add garlic and cook briefly.
- Pour in chicken broth and simmer for 2โ3 minutes.
- Stir in heavy cream and parmesan cheese until smooth and creamy.
- Return chicken to the pan and simmer for 5โ7 minutes until sauce thickens.
- Add lemon juice and fresh herbs, stirring gently.
- Serve chicken over basmati rice and spoon extra sauce on top.
Notes
- Donโt overcook chicken to keep it juicy and tender.
- Fresh herbs enhance flavor but dried herbs work well too.
- Let the sauce rest 2โ3 minutes before serving for better thickness.
