Ingredients
- 1–2 tablespoons vegetable oil
- Salt and black pepper, to taste
- 1.5 pounds boneless, skinless chicken breasts
- 4 ounces cream cheese, softened to room temperature
- 3 tablespoons unsalted butter, softened to room temperature
- 1 can (10.5 ounces) cream of chicken soup
- 3 cloves garlic, minced
- 3/4 cup chicken broth
- 1 packet (0.7 ounce) dry Italian salad dressing mix
- 16 ounces angel hair pasta
- Chopped fresh parsley, for serving (optional)
- Cracked black pepper, for serving (optional)
- Grated Parmesan cheese, for serving (optional)
Instructions
- Heat the vegetable oil in a large skillet over medium-high heat.
- Season the chicken breasts with salt and black pepper.
- Sear the chicken for 2–3 minutes per side until lightly golden. This step is optional but adds extra flavor.
- Transfer the chicken breasts to the slow cooker.
- In a medium bowl, combine the softened cream cheese, softened butter, cream of chicken soup, minced garlic, chicken broth, and dry Italian dressing mix.
- Whisk or stir the mixture until well combined, then pour the sauce over the chicken in the slow cooker.
- Cover and cook on LOW for 4–5 hours or on HIGH for 2–3 hours, until the chicken is tender and cooked through.
- Remove the chicken from the slow cooker and shred or slice it into bite-sized pieces.
- Stir the sauce well until smooth and creamy, then return the chicken to the slow cooker and toss to coat.
- Cook the angel hair pasta according to package directions. Drain well.
- Serve the creamy angel chicken over the cooked angel hair pasta.
- Garnish with chopped fresh parsley, cracked black pepper, and grated Parmesan cheese if desired.
Notes
- Use low-sodium cream of chicken soup and chicken broth if you are sensitive to salt.
- Do not overcook the chicken breasts, as they can become dry.
- Chicken thighs can be substituted for chicken breasts for a richer and more tender result.
- If the sauce becomes too thick, stir in a splash of warm chicken broth before serving.
- For best results, cook the angel hair pasta separately and add the chicken and sauce on top.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
