Description

Mongolian Ground Beef Noodles are a quick and flavorful dinner made with lean ground beef, tender noodles, fresh ginger, garlic, and a rich sweet-savory Mongolian sauce. It is an easy weeknight meal packed with bold Asian-inspired flavor.


Ingredients

  • 1 lb lean ground beef
  • 4 tsp fresh grated ginger
  • 6 cloves garlic, minced
  • ½ cup brown sugar
  • ½ cup low-sodium beef broth
  • ½ cup low-sodium soy sauce
  • ¼ cup hoisin sauce
  • ½ tsp black pepper
  • ¼ tsp red pepper flakes, optional
  • 8 oz linguine or fettuccine noodles
  • 2 tbsp cornstarch
  • ¼ cup water
  • 4 green onions, sliced


Instructions

  1. Bring a large pot of salted water to a boil. Cook the linguine or fettuccine according to the package directions until al dente. Drain and set aside.
  2. Heat a large skillet over medium-high heat. Add the lean ground beef and cook for 6–8 minutes, breaking it apart with a spoon, until browned and fully cooked. Drain excess grease if needed.
  3. Add the grated ginger and minced garlic to the beef. Cook for 1–2 minutes, stirring frequently, until fragrant.
  4. In a bowl, whisk together the brown sugar, beef broth, soy sauce, hoisin sauce, black pepper, and red pepper flakes.
  5. Pour the sauce mixture into the skillet with the beef. Stir well and bring to a gentle simmer.
  6. In a small bowl, whisk together the cornstarch and water until smooth. Pour the slurry into the skillet while stirring continuously.
  7. Cook for 2–3 minutes, stirring occasionally, until the sauce thickens and becomes glossy.
  8. Add the cooked noodles to the skillet and toss thoroughly until they are evenly coated with the Mongolian beef sauce.
  9. Stir in the sliced green onions, reserving some for garnish if desired.
  10. Serve immediately with additional green onions on top.

Notes

  • Linguine and fettuccine both work well, but other long noodles can also be used.
  • For a spicier dish, increase the amount of red pepper flakes.
  • Whisk the cornstarch with cold water before adding it to the sauce to prevent lumps.
  • Do not overcook the noodles; slightly firm al dente noodles hold up best when tossed with the sauce.
  • For extra flavor, garnish with additional sliced green onions before serving.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently on the stovetop or in the microwave with a small splash of beef broth or water.
