Description

One Pan Sausage, Green Beans, and Potatoes is an easy and flavorful dinner made with smoky sausage, tender roasted baby potatoes, and fresh green beans. Everything is seasoned with garlic, onion powder, smoked paprika, and herbs, then cooked together for a simple family meal with minimal cleanup.


Ingredients

  • 1 lb smoked sausage, beef or pork, sliced into rounds
  • 1 lb baby potatoes, halved or quartered if large
  • 12 oz fresh green beans, trimmed
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried parsley
  • Salt and black pepper, to taste
  • ¼ teaspoon red pepper flakes, optional
  • Fresh parsley, for garnish, optional
  • Grated Parmesan, for garnish, optional


Instructions

  1. Preheat the oven to 400°F.
  2. Wash the baby potatoes and cut them in half. Quarter any larger potatoes so they cook evenly.
  3. Place the potatoes in a large bowl and drizzle with about 1½ tablespoons of olive oil.
  4. Add the garlic powder, onion powder, smoked paprika, dried parsley, salt, and black pepper. Toss until the potatoes are evenly coated.
  5. Spread the seasoned potatoes onto a large baking sheet or oven-safe pan in a single layer.
  6. Roast the potatoes for 20 minutes.
  7. While the potatoes cook, slice the smoked sausage into rounds and trim the fresh green beans.
  8. Place the green beans and sausage in the bowl. Drizzle with the remaining olive oil and toss to coat.
  9. Remove the pan from the oven and carefully add the sausage and green beans around the partially cooked potatoes.
  10. Sprinkle with optional red pepper flakes for extra heat.
  11. Return the pan to the oven and roast for another 15–20 minutes, stirring once halfway through, until the potatoes are tender, the green beans are cooked, and the sausage is lightly browned.
  12. Taste and adjust the seasoning with additional salt and black pepper if needed.
  13. Garnish with fresh parsley or grated Parmesan, if desired.
  14. Serve warm directly from the pan.
