Ingredients

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup light brown sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
  • 1 cup chocolate chips or chunks (optional)
  • Salted caramel (homemade or store-bought)
  • For homemade caramel:
  • 1 cup granulated sugar
  • 1/4 cup water
  • 1/2 cup heavy cream
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon fine sea salt


Instructions

  1. Preheat oven to 350ยฐF (175ยฐC) and line a baking sheet with parchment paper.
  2. Cream butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in eggs one at a time, then add vanilla extract.
  4. In another bowl, whisk flour, baking soda, and salt together.
  5. Gradually mix dry ingredients into wet mixture until combined.
  6. Fold in chocolate chips if using.
  7. Scoop cookie dough onto baking sheet.
  8. Drizzle or press a small amount of salted caramel into each cookie.
  9. Bake for 10โ€“12 minutes until edges are golden but centers are soft.
