Description

Sloppy Joe Cheddar Bay Biscuit Casserole is a comforting family dinner that combines saucy seasoned ground beef with a cheesy biscuit topping. The rich Sloppy Joe filling is baked beneath golden Cheddar Bay Biscuits for an easy, hearty casserole that’s perfect for busy weeknights.

Ingredients

  • 2 pounds ground beef
  • 3 cloves garlic, minced
  • 1/2 tablespoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1/2 cup tomato sauce
  • 1 tablespoon Worcestershire sauce
  • 1 cup ketchup
  • 2 tablespoons yellow mustard
  • 1/4 cup light brown sugar, packed
  • 1/2 cup shredded sharp cheddar cheese
  • 2 (11.36-ounce) boxes Cheddar Bay Biscuit mix
  • 1 1/2 cups cold water, for preparing the biscuits
  • 1 1/2 cups shredded sharp cheddar cheese, divided
  • 1/2 cup (1 stick) salted butter, for the herb butter

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Heat a large skillet over medium-high heat. Add the ground beef and cook until browned and fully cooked, breaking it apart with a spoon as it cooks. Drain excess grease if needed.
  3. Add the minced garlic, onion powder, salt, and ground pepper. Stir and cook for about 1 minute until fragrant.
  4. Stir in the tomato sauce, Worcestershire sauce, ketchup, yellow mustard, and brown sugar. Simmer for 5–7 minutes, stirring occasionally, until the sauce thickens slightly.
  5. Stir 1/2 cup shredded sharp cheddar cheese into the beef mixture until melted and combined.
  6. Transfer the Sloppy Joe filling to the prepared baking dish and spread it into an even layer.
  7. Prepare the Cheddar Bay Biscuit mix according to the package directions using 1 1/2 cups cold water. Stir in 1 cup of the remaining shredded cheddar cheese.
  8. Carefully spoon or spread the biscuit mixture evenly over the Sloppy Joe filling.
  9. Sprinkle the remaining 1/2 cup shredded cheddar cheese over the biscuit topping.
  10. Bake for 25–30 minutes, or until the biscuit topping is golden brown and cooked through.
  11. While the casserole bakes, melt the salted butter. Prepare the herb butter mixture according to the biscuit package directions.
  12. Brush the melted herb butter generously over the hot biscuit topping as soon as the casserole comes out of the oven.
  13. Let the casserole rest for 5–10 minutes before serving.

Notes

  • One pound of ground beef can be used for a lighter filling with a higher biscuit-to-beef ratio.
  • Do not overmix the biscuit batter, as this can make the topping dense.
  • For the best texture, allow the casserole to rest for several minutes before serving.
  • Check the center of the biscuit topping to make sure it is fully cooked before removing the casserole from the oven.
  • Leftovers can be refrigerated in an airtight container for up to 3–4 days and reheated in the oven or microwave.
