Description

This Sweet Potato Burger Bowl combines seasoned roasted sweet potatoes, lean ground beef, crisp lettuce, juicy tomatoes, cheese, pickles, and a creamy burger-style sauce for an easy and satisfying meal.


Ingredients

  • For the sweet potato: 2 pounds sweet potato (2 to 3 potatoes), cut into ½-inch cubes
  • 2 tablespoons extra-virgin olive oil
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • Kosher salt and freshly ground black pepper, to taste
  • For the burger meat: 1 pound lean ground beef
  • ½ teaspoon onion powder

  • For the sauce: ¼ cup mayonnaise
  • 1 ½ tablespoons ketchup

  • For the toppings: 3 cups shredded lettuce
  • 4 Roma tomatoes, deseeded and diced
  • 1 cup shredded cheese
  • ½ cup diced white onion
  • ½ cup diced dill pickles


Instructions

  1. Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper if desired.
  2. Add the cubed sweet potatoes to a large bowl. Toss with olive oil, onion powder, garlic powder, paprika, salt, and black pepper until evenly coated.
  3. Spread the sweet potatoes in a single layer on the prepared baking sheet. Roast for 25 to 30 minutes, turning once halfway through, until tender and lightly browned.
  4. While the sweet potatoes roast, heat a large skillet over medium-high heat. Add the lean ground beef and cook, breaking it apart with a spoon, until browned and cooked through.
  5. Season the beef with onion powder, garlic powder, paprika, salt, and black pepper. Stir well and cook for another 1 to 2 minutes.
  6. To make the sauce, whisk together mayonnaise, ketchup, sweet pickle relish, white vinegar, and a pinch of kosher salt until smooth.
  7. Prepare the toppings by shredding the lettuce and dicing the tomatoes, white onion, and dill pickles.
  8. Divide the roasted sweet potatoes among four bowls. Add the seasoned burger meat, lettuce, tomatoes, shredded cheese, diced onion, and dill pickles.
  9. Drizzle each bowl with the burger sauce and serve immediately.
