Ingredients

  • 4 boneless, skinless chicken breasts (about 68 oz each)
  • 2 tablespoons olive oil or butter
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup sliced mushrooms
  • 1 small onion, thinly sliced
  • 1 cup shredded mozzarella cheese or Monterey Jack
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons fresh parsley, chopped, for garnish


Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a baking dish.
  2. If the chicken breasts are very thick, gently pound them to an even thickness so they cook evenly.
  3. In a small bowl, combine the paprika, garlic powder, onion powder, salt, and black pepper.
  4. Pat the chicken breasts dry with paper towels, then season both sides evenly with the spice mixture.
  5. Heat the olive oil or butter in a large oven-safe skillet over medium-high heat. Add the chicken breasts and sear for 3–4 minutes per side, until nicely browned. Transfer the chicken to a plate if using a separate baking dish.
  6. Add the sliced mushrooms and onion to the same skillet. Cook for 5–7 minutes, stirring occasionally, until the mushrooms are tender and the onions are softened and lightly caramelized.
  7. Return the chicken to the skillet or arrange it in the prepared baking dish. Spoon the mushroom and onion mixture evenly over each chicken breast.
  8. Sprinkle the mozzarella or Monterey Jack cheese over the chicken, followed by the shredded cheddar cheese.
  9. Bake for 15–20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is melted and bubbly.
  10. Remove from the oven and let the chicken rest for 5 minutes.
  11. Garnish with fresh chopped parsley and serve warm with your favorite side dishes.
