Texas Tamale Pie is a hearty, comforting casserole featuring a flavorful ground beef and black bean filling topped with a golden cornbread crust and melted cheddar cheese. Packed with Tex-Mex flavors, this easy family dinner is perfect for weeknights, potlucks, or meal prep.
Ingredients
- 1 pound ground beef
- 1 medium onion, chopped
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) diced tomatoes with green chilies
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cornmeal
- 1 cup milk
- 1 large egg
- 1 cup shredded cheddar cheese
- 1/2 cup sliced black olives (optional)
- 1/4 cup chopped fresh cilantro, for garnish
Instructions
- Preheat the oven to 375ยฐF (190ยฐC). Grease a 9×13-inch baking dish.
- In a large skillet over medium heat, cook the ground beef and chopped onion until the beef is browned. Drain excess grease.
- Stir in the black beans, diced tomatoes with green chilies, chili powder, cumin, garlic powder, salt, and black pepper. Simmer for 5 minutes.
- Spread the beef mixture evenly into the prepared baking dish.
- In a bowl, whisk together the cornmeal, milk, and egg until smooth. Pour the batter evenly over the beef mixture.
- Sprinkle the shredded cheddar cheese over the top and add sliced black olives if using.
- Bake for 30โ35 minutes, or until the cornbread topping is golden and cooked through.
- Let cool for 5 minutes, garnish with fresh cilantro, and serve warm.
Notes
- For extra heat, add diced jalapeรฑos or a pinch of cayenne pepper.
- Monterey Jack or a Mexican cheese blend can be used instead of cheddar.
