Ingredients

  • 1 pound ground beef

  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cornmeal
  • 1 cup milk
  • 1 large egg
  • 1 cup shredded cheddar cheese
  • 1/2 cup sliced black olives (optional)
  • 1/4 cup chopped fresh cilantro, for garnish


Instructions

  1. Preheat the oven to 375ยฐF (190ยฐC). Grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, cook the ground beef and chopped onion until the beef is browned. Drain excess grease.
  3. Stir in the black beans, diced tomatoes with green chilies, chili powder, cumin, garlic powder, salt, and black pepper. Simmer for 5 minutes.
  4. Spread the beef mixture evenly into the prepared baking dish.
  5. In a bowl, whisk together the cornmeal, milk, and egg until smooth. Pour the batter evenly over the beef mixture.
  6. Sprinkle the shredded cheddar cheese over the top and add sliced black olives if using.
  7. Bake for 30โ€“35 minutes, or until the cornbread topping is golden and cooked through.
  8. Let cool for 5 minutes, garnish with fresh cilantro, and serve warm.
