Ingredients
- For the Base:
- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- For the Vegetables:
- 1 cup carrots, sliced
- 1 cup potatoes, diced
- 1 cup corn kernels
- 1 cup green beans, chopped
- For the Sauce:
- 1 (10.5 oz) can cream of mushroom soup
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1 cup shredded cheddar cheese
Instructions
- Preheat the oven to 375ยฐF (190ยฐC). Lightly grease a 9ร13-inch baking dish.
- In a large skillet over medium heat, cook the ground beef with the chopped onion until the beef is browned. Drain any excess fat.
- Add the minced garlic, salt, and black pepper, and cook for 1 minute.
- Stir in the carrots, potatoes, corn, green beans, cream of mushroom soup, thyme, and parsley. Mix well until everything is evenly coated.
- Transfer the mixture to the prepared baking dish and spread it into an even layer.
- Cover the dish with foil and bake for 45 minutes, or until the vegetables are tender.
- Remove the foil, sprinkle the shredded cheddar cheese evenly over the top, and bake uncovered for another 10โ15 minutes until the cheese is melted and bubbly.
- Let the casserole rest for 5 minutes before serving.
