Ingredients
- 2 cups sushi rice, uncooked
- 2ยฝ cups water
- ยผ cup rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- 1 lb fresh salmon fillet, skinless and diced
- ยฝ cup mayonnaise
- 2 tablespoons Sriracha sauce (or to taste)
- 1 teaspoon sesame oil
- ยฝ cup green onions, chopped, plus extra for garnish
- 1 sheet nori, cut into small strips
- Tobiko, to taste (optional, for garnish)
Instructions
- Preheat the oven to 375ยฐF (190ยฐC). Lightly grease an 8ร8-inch baking dish.
- Rinse the sushi rice until the water runs clear. Cook the rice with the water according to package directions.
- In a small bowl, combine the rice vinegar, sugar, and salt. Fold the mixture into the warm cooked rice and spread the rice evenly into the prepared baking dish.
- In a mixing bowl, combine the diced salmon, mayonnaise, Sriracha, sesame oil, and chopped green onions. Mix until well coated.
- Spread the salmon mixture evenly over the seasoned sushi rice.
- Bake for 20โ25 minutes, or until the salmon is cooked through and the top is lightly golden.
- Remove from the oven and garnish with extra green onions, nori strips, and tobiko if desired.
- Serve warm with additional nori sheets or your favorite sushi toppings.
