Ingredients
- 2 small chicken breasts, cut into 1/2-inch pieces
- 1 Italian-style loaf, sliced lengthwise
- 2 tablespoons poultry seasoning, or a mixture of salt, pepper, and garlic powder
- 1 1/2 sticks unsalted butter
- 2 tablespoons minced garlic or garlic paste
- 2 tablespoons chopped parsley
- 1 teaspoon crushed red pepper flakes
- 2 tablespoons olive oil
- 1/4 cup shredded Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 cup heavy cream
Instructions
- Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil.
- Place the chicken pieces in a bowl and season evenly with the poultry seasoning. Toss well to coat.
- Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 5–7 minutes, stirring occasionally, until golden brown and cooked through. Transfer the chicken to a plate.
- Reduce the skillet heat to medium. Add 1/2 stick of the butter and allow it to melt.
- Add the minced garlic and crushed red pepper flakes. Cook for 30–60 seconds, stirring constantly, until fragrant.
- Pour in the heavy cream and stir to combine. Add the Parmesan cheese and cook for 2–3 minutes, stirring until the sauce becomes creamy and slightly thickened.
- Return the cooked chicken to the skillet and stir until it is evenly coated in the creamy Alfredo sauce.
- Place the sliced Italian loaf cut-side up on the prepared baking sheet.
- Melt the remaining 1 stick of butter and mix it with half of the chopped parsley and a little additional garlic if desired. Brush the garlic butter generously over the bread.
- Spoon the creamy chicken Alfredo mixture evenly over both halves of the bread.
- Sprinkle the mozzarella cheese over the chicken Alfredo layer.
- Bake for 10–15 minutes, until the bread is crisp around the edges and the cheese is melted and bubbly.
- For a more golden top, switch the oven to broil for 1–2 minutes, watching carefully to prevent burning.
- Remove from the oven and sprinkle with the remaining chopped parsley.
- Slice into portions and serve hot.
